    Ingredients

    For the beef marinade:

    • 500 gram stir-fry beef (thinly sliced)
    • 1 tablespoon soy sauce
    • 1 tablespoon fish sauce
    • 1 teaspoon sugar
    • 2 cloves garlic (minced)
    • 1/2 teaspoon black pepper
    • 1 tablespoon vegetable oil

    For the stir-fry:

    • 2 medium potatoes (thinly sliced or cut into matchsticks)
    • 1 onion
    • 2 cloves garlic (minced)
    • 1 tablespoon soy sauce
    • 1 tablespoon fish sauce
    • 1 teaspoon sugar
    • 1/2 teaspoon black pepper
    • 1 tablespoon oyster sauce
    • 2 teaspoons vegetable oil
    • spring onions (sliced, for garnish)
    • fresh coriander (optional, for garnish)

    Instructions

    Marinate the beef:

    1. In a bowl, combine the sliced beef with soy sauce, fish sauce, sugar, minced garlic, black pepper, and vegetable oil.
    2. Mix well and let it marinate for at least 15 minutes while you prepare the other ingredients.

    Fry the potatoes:

    1. Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat.
    2. Add the thinly sliced potatoes and fry until golden brown and crispy on the outside.
    3. Remove and drain on paper towels to remove excess oil. (If you prefer a healthier version, you can air-fry or bake the potatoes instead of deep-frying.)

    Stir-fry the beef:

    1. In the same pan, add 1 tablespoon of oil and heat over medium-high.
    2. Add minced garlic and stir-fry until fragrant (about 30 seconds).
    3. Add the marinated beef and cook for 2-3 minutes until browned.
    4. Toss in the sliced onions and stir-fry for another 2 minutes until softened.

    Combine everything:

    1. Add the fried potatoes back into the pan.
    2. Pour in the soy sauce, fish sauce, oyster sauce (if using), sugar, and black pepper.
    3. Stir well and cook for another 2 minutes, allowing the flavours to combine.

    Serve:

    1. Garnish with sliced spring onions and fresh coriander if desired.
    2. Serve hot with steamed jasmine rice, which helps absorb the rich, savoury flavours. Alternatively, you can serve it over noodles like vermicelli or flat rice noodles.
    3. For extra flavour, add a splash of lime juice or a sprinkle of chili flakes before serving.
