Ingredients
For the beef marinade:
- 500 gram stir-fry beef (thinly sliced)
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 2 cloves garlic (minced)
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
For the stir-fry:
- 2 medium potatoes (thinly sliced or cut into matchsticks)
- 1 onion
- 2 cloves garlic (minced)
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1 tablespoon oyster sauce
- 2 teaspoons vegetable oil
- spring onions (sliced, for garnish)
- fresh coriander (optional, for garnish)
Instructions
Marinate the beef:
- In a bowl, combine the sliced beef with soy sauce, fish sauce, sugar, minced garlic, black pepper, and vegetable oil.
- Mix well and let it marinate for at least 15 minutes while you prepare the other ingredients.
Fry the potatoes:
- Heat 2 tablespoons of vegetable oil in a large pan or wok over medium heat.
- Add the thinly sliced potatoes and fry until golden brown and crispy on the outside.
- Remove and drain on paper towels to remove excess oil. (If you prefer a healthier version, you can air-fry or bake the potatoes instead of deep-frying.)
Stir-fry the beef:
- In the same pan, add 1 tablespoon of oil and heat over medium-high.
- Add minced garlic and stir-fry until fragrant (about 30 seconds).
- Add the marinated beef and cook for 2-3 minutes until browned.
- Toss in the sliced onions and stir-fry for another 2 minutes until softened.
Combine everything:
- Add the fried potatoes back into the pan.
- Pour in the soy sauce, fish sauce, oyster sauce (if using), sugar, and black pepper.
- Stir well and cook for another 2 minutes, allowing the flavours to combine.
Serve:
- Garnish with sliced spring onions and fresh coriander if desired.
- Serve hot with steamed jasmine rice, which helps absorb the rich, savoury flavours. Alternatively, you can serve it over noodles like vermicelli or flat rice noodles.
- For extra flavour, add a splash of lime juice or a sprinkle of chili flakes before serving.
