Sesame Shrimp on Toast

    Ingredients

    • 1 egg (beaten)
    • 1 cup shrimp (peeled)
    • 8 slices French stick (or 4 slices of bread cut in 2)
    • 1 onion (grated)
    • 4 tablespoons white seasame seeds
    • 1 teaspoon ginger (grated)
    • 2 teaspoons garlic (crushed)
    • corn flour (for dusting)
    • salt and pepper (to taste)
    • vegetable oil (for frying)

    Instructions

    1. Place the sesame seeds in a medium-heated pan and brown, being careful not to burn.
    2. Combine the shrimp, garlic, ginger, grated onion, egg, salt, and black pepper in a bowl and mix together. The mixture should remain firm and fairly dry; if it becomes too wet, add a little dusting of corn flour.
    3. Press 2 spoons of the mixture onto each piece of bread, covering the entire top surface.
    4. Refrigerate the bread for 2 hours in an airtight container to contain the odor.
    5. In a pan, deep-fry the bread, shrimp side down, ensuring the shrimp is firmly stuck to the bread before dipping.
    6. Once brown, turn the bread over and fry the other side for a moment.
    7. Drain on paper towels before serving.
    8. Serve with a mix of vinegar, fish sauce, and sweet chili sauce as a dipping sauce.
