Lemongrass Chicken

lemongrass chicken

Lemongrass Chicken is a popular dish in Vietnamese cuisine, celebrated for its light, aromatic flavour profile that brings together the herbaceous zing of lemongrass with tender, juicy chicken. The unique mix of fish sauce and Worcestershire sauce, often a substitute for umami in Vietnamese-inspired dishes, adds depth and complexity. This half-and-half blend with Nuoc Mam (Vietnamese fish sauce) gives the chicken a rich savouriness that complements the dish’s zesty citrus notes.

With a brief marination in lemongrass, lime, garlic, and chilli, the chicken absorbs all the bold Vietnamese flavours before a quick stir-fry brings it to life. Served over jasmine rice, this dish captures the essence of Vietnam’s fresh, flavourful cooking and is perfect for a weeknight meal that transports you straight to the bustling street markets and home kitchens of Vietnam. Garnished with herbs like coriander and fresh chilli, this Lemongrass Chicken is wholesome, aromatic, and layered with an authentic taste.

Lemongrass Chicken

    Ingredients

    • 500 gram chicken breast (thinly sliced)
    • 2 stalks lemongrass
    • 2 cloves garlic (minced)
    • 1-2 red chilies (adjust to taste)
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon fish sauce (nuoc mam)
    • 1 tablespoon soy sauce
    • 1 tablespoon lime juice
    • 1 tablespoon brown sugar or honey (optional, for balance)
    • 1 tablespoon vegetable oil (for frying)
    • fresh coriander and spring onions (optional, chopped, for garnish)

    Instructions

    1. In a bowl, combine the sliced chicken with lemongrass, garlic, half of the chilli, fish sauce, soy sauce, lime juice, and sugar or honey. Mix well and let it marinate for at least 15 minutes (up to 1 hour for a more intense flavour).
    2. Heat the oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook, stirring frequently, until the chicken is golden and cooked through, about 5–7 minutes.
    3. Transfer the chicken to a serving plate and sprinkle with chopped coriander, spring onions, and extra chilli slices if desired.
    4. Serve the lemongrass chicken over steamed jasmine rice, with fresh cucumber slices or a simple salad on the side.
