Ingredients
- 500 grams chicken pieces (marinated in soy sauce and rice wine vinegar)
- 2 tablespoons crushed chili sauce
- 3 tablespoons Thai sweet chilli sauce
- 1 large onion (sliced)
- 1 red capsicum (bell pepper) (sliced)
- 1 carrot (julienned or thinly sliced)
- 2-3 spring onions
- 2 tablespoons oil (vegetable or sesame)
Instructions
- In a bowl, combine chicken pieces with soy sauce and rice wine vinegar. Let it marinate for at least 30 minutes.
- Heat oil in a large pan or wok over medium heat. Add the onions, capsicum, and carrot. Stir-fry for 3-4 minutes until they begin to soften.
- Push the vegetables to one side of the pan. Add the marinated chicken to the other side and cook for about 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Once the chicken is cooked, add the crushed chilli sauce and Thai sweet chilli sauce. Stir well to combine everything and cook for another 2-3 minutes.
- Toss in the chopped spring onions and stir-fry for an additional minute.
- Serve the stir-fry hot with steamed rice.
