Rice and Zucchini Patties

    Ingredients

    • 1 1/2 cups cooked brown rice
    • 2 cups zucchini (greated)
    • 1 onion (finely chopped)
    • 2 eggs (beaten)
    • 1 can creamed corn
    • 1 cup breadcrumbs
    • 2 tablespoons margarine, butter or oil
    • 1 tablespoon parsley (chopped)
    • salt and pepper (to taste)

    Instructions

    1. In a large bowl, thoroughly mix all the ingredients together.
    2. Form the mixture into about a dozen small balls.
    3. Place the balls on a hot, greased BBQ and flatten them into patty shapes.
