Singapore Noodles

    Ingredients

    • 1/4 cup vegetable oil
    • 1 tablespoon garlic (crushed)
    • 1 tablespoon ginger (crushed)
    • 1 1/2 litre water
    • 2 teaspoons salt
    • 100 gram rice noodles
    • 2 cups shredded cooked meat (chicken, beef, or pork)
    • 1/3 cup spring onion (slivered)
    • 2 hot red chilies (sliced)
    • 1/4 cup oyster sauce
    • 3 tablespoons curry powder
    • 2 tablespoons soy sauce
    • 2 cups bean sprouts
    • 1/2 cup carrot (shredded)
    • 1/4 cup coriander (chopped)

    Instructions

    1. Heat the water in a saucepan, add 1 teaspoon of salt, and bring to a boil. Once boiling, add the rice noodles. Turn off the heat and let the noodles stand.
    2. In a wok, heat some oil and stir-fry the meat in small batches with a little garlic and ginger until browned. Set aside and drain and rinse the noodles.
    3. In a bowl, mix the remaining ginger, garlic, oyster sauce, soy sauce, and curry powder to form a sauce.

    5. Reheat the wok with a little more oil and toss some of the noodles with the carrot, meat, and a little of the sauce until the mixture is cooked through.
    6. Stir in the bean sprouts and toss until the mixture is evenly combined. Garnish with sliced chilli and coriander.
