Malaysian Stir Fried Cabbage

    Ingredients

    • 1 medium-sized cabbage
    • 4 tablespoons vegetable oil
    • 2 teaspoons curry powder
    • 250 gram minced beef
    • 250 gram cooked prawn meat
    • 1 onion (finely chopped)
    • 1 chili (finely chopped)
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1 splash water
    • coriander (to garnish)

    Instructions

    1. Shred the cabbage into thin strips.
    2. Heat 2 tablespoons of vegetable oil in a saucepan. Stir-fry the minced beef over medium heat until cooked
    3. In another pan, heat the remaining 2 tablespoons of vegetable oil. Stir-fry the onion with the curry powder and salt over medium heat. Cook in small batches, then return all to the pan and cook for 2 minutes until mixed and cooked throughout. Remove from the pan and set aside.
    4. Add the chopped prawn meat and chilli to the pan. Stir-fry until cooked, then mix with the beef mixture and set aside.
    5. Heat a wok over high heat. Add a splash of water and the remaining oil. Add the cabbage in batches.
    6. Once the cabbage is nearly cooked, add a cup of cabbage with a cup of the meat mixture. Stir-fry on high for a few seconds.
    7. Do not overcook the cabbage; it is best served a little crisp.
    8. Serve sizzling with some coriander to garnish.
