    Ingredients

    • 500 gram chicken breast (cut into bite-sized pieces)
    • 200 gram noodles
    • 3 tablespoons soy sauce
    • 3 tablespoons Worcestershire sauce
    • 1 1/2 tablespoons hoisin sauce
    • 1 tablespoon sambal oelek (or chili paste)
    • 2 cloves garlic (minced)
    • 1 teaspoon ginger (minced)
    • 1 handfull stir fry salad mix
    • 1 tablespoon coriander (chopped)
    • 1 tablespoon Thai basil (chopped)
    • 1 tablespoon vegetable oil (for frying)

    Instructions

    1. Cook the noodles according to the package instructions. Drain and set aside.
    2. Heat oil in a large pan or wok over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Add the sliced chicken breast to the pan. Stir-fry until the chicken is cooked through and lightly browned.
    3. In a small bowl, mix together soy sauce, sambal oelek, Worcestershire sauce, and hoisin sauce.
    4. Add the cooked noodles to the pan with the chicken. Pour the sauce over the noodles and chicken, tossing to coat everything evenly. Add the pre-cut salad mix and stir-fry for another 1-2 minutes until the vegetables are slightly wilted but still crunchy.
    5. Stir in the herbs of coriander and basil and mix for 1 - 2 minutes. Optionally Serve with a slice a lime and garnish with coriander leaves.
