Ingredients
- 500 gram chicken breast (cut into bite-sized pieces)
- 200 gram noodles
- 3 tablespoons soy sauce
- 3 tablespoons Worcestershire sauce
- 1 1/2 tablespoons hoisin sauce
- 1 tablespoon sambal oelek (or chili paste)
- 2 cloves garlic (minced)
- 1 teaspoon ginger (minced)
- 1 handfull stir fry salad mix
- 1 tablespoon coriander (chopped)
- 1 tablespoon Thai basil (chopped)
- 1 tablespoon vegetable oil (for frying)
Instructions
- Cook the noodles according to the package instructions. Drain and set aside.
- Heat oil in a large pan or wok over medium-high heat. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Add the sliced chicken breast to the pan. Stir-fry until the chicken is cooked through and lightly browned.
- In a small bowl, mix together soy sauce, sambal oelek, Worcestershire sauce, and hoisin sauce.
- Add the cooked noodles to the pan with the chicken. Pour the sauce over the noodles and chicken, tossing to coat everything evenly. Add the pre-cut salad mix and stir-fry for another 1-2 minutes until the vegetables are slightly wilted but still crunchy.
- Stir in the herbs of coriander and basil and mix for 1 - 2 minutes. Optionally Serve with a slice a lime and garnish with coriander leaves.
