5 Vegetable Stir Fry

    Ingredients

    • 1 tablespoon peanut oil
    • 3 medium carrots
    • 2 large onions
    • 1 capsicum (bell pepper)
    • 2 cups broccoli
    • 1/2 red cabbage
    • 1 cup chicken broth
    • 1/2 cup fresh mint
    • salt and pepper (to taste)

    Instructions

    1. Cut the carrots into diagonal slices.
    2. Cut the capsicum into 5cm triangles.
    3. Break the broccoli into florets.
    4. Thinly slice the cabbage.
    5. Slice the onions into quarters and separate the layers.
