Ingredients
- 500 grams beef mince
- 1 medium onion (finely chopped)
- 1 medium carrot (finely diced or julienned)
- 3 tablespoon red capsicum strips (optional)
- 1/2 cup frozen or fresh peas
- 2 tablespoons miso paste
- 2 tablespoons gochujang paste (adjust to taste)
- 2 tablespoons soy sauce
- 1 tablespoon seasame oil
- 1 tablespoon sugar (optional, for balance)
- 2 cloves garlic (minced)
- 1 tablespoon ginger (grated, optional)
- 2 tablespoon water
- spring onions (for garnish)
- seasame seeds (for garnish)
Instructions
- In a small bowl, mix miso paste, gochujang, soy sauce, sugar, and 2 tablespoons of water to create a smooth sauce. Set aside.
- Heat sesame oil in a large frying pan or wok over medium heat. Add the onion and cook until softened, about 3 minutes. Add the beef mince and cook, breaking it up with a spatula, until browned and cooked through.
- Stir in the garlic and ginger (if using) and cook for 1-2 minutes until fragrant.
- Add the carrot, peas and optional red capsicum strips. Stir-fry for 2-3 minutes until the vegetables begin to soften.
- Pour the miso-gochujang sauce over the beef and vegetables. Stir to coat evenly and cook for another 2-3 minutes until everything is well combined and heated through. Adjust seasoning to taste (add more soy sauce or gochujang if needed).
- Transfer the stir-fry to a serving dish. Optionally garnish with spring onions and sesame seeds.
- Serve over steamed rice for a hearty meal or use as a topping for noodles or inside lettuce wraps for a lighter option.
