    • 2 cups shredded cabbage

    • 1/4 cup cooked bacon or pork belly (option)
    • 1/4 cup tempura scraps (tenkasu) (optional, but adds crunch)
    • 1/4 cup grated yam (optional, for extra fluffiness)

    Optional Toppings:

    • Okonomiyaki sauce (or a mix of Worcestershire sauce & ketchup)
    • Japanese mayonnaise
    • Bonito flakes (katsuobushi)
    • Aonori (dried seaweed flakes)
    • spring onion or chives

    Instructions

    1. In a bowl, mix flour and dashi (or water) until a smooth batter. Add the egg and stir.
    2. Gently fold in the shredded cabbage, green onions, tempura scraps, and grated yam (if using).
    3. Heat a pan over medium heat with a little oil. Pour half the batter into the pan, shaping it into a round pancake. If using bacon or pork belly, place slices on top.
    4. After 3-4 minutes, carefully flip the pancake and cook for another 3-4 minutes until golden brown and cooked through.
