    Ingredients

    Main Ingredients

    • 250 gram dried udon noodles
    • 8 pieces abura-age (deep-fried tofu) (cut into triangles)
    • 5 cups water
    • 1 pinch salt
    • 4 spring onions (finely slivered)

    Broth

    • 3 tablespoons dashi paste
    • 6 cups water
    • 1 tablespoon soy sauce
    • 1 tablespoon sake

    Instructions

    1. In a pot, bring 5 cups of water with a pinch of salt to a boil. Once boiling, add the dried udon noodles and cook until tender.
    2. In another pot, bring 6 cups of water to a boil. Add the dashi paste, soy sauce, sugar, and sake. Stir well.
    3. Drain the cooked noodles and rinse them under hot water. Drain again and place them in a serving dish.
    4. Once the broth comes to a boil, turn off the heat and stir in the fried tofu. Pour the hot broth over the noodles and garnish with slivered spring onions.
