    Ingredients

    • 500 gram chicken (diced or sliced into bite-sized pieces)
    • 2 tablespoons curry powder
    • 2 tablespoons soy sauce
    • 2 tablespoons cornflour
    • 1/4 cup Japanese mayonnaise
    • 1 cup mushrooms
    • 2 spring onions (sliced, greens and whites separated)

    Instructions

    1. In a mixing bowl, combine the chicken, curry powder, soy sauce, cornflour, mushrooms, and Japanese mayonnaise. Mix until the chicken is well coated. Cover and refrigerate for at least 1 hour to allow the flavours to meld.
    2. Heat a large pan or wok over medium-high heat. Once hot, add the marinated chicken mixture. Stir-fry for 6–8 minutes, or until the chicken is cooked through and the mushrooms are tender.
