- 600 gram chicken breast (thinly sliced)
- 300 gram egg noodles

- 1 onion (sliced)
- 1 carrot
- 1 capsicum (sliced)
- 2 - 3 cloves garlic (minced)
- 1 tablespoon ginger (minced)
- 2 tablespoons sambal oelek
- 1 tablespoon kecap manis (Indonesian sweet soy sauce)
- 1 tablespoon fish sauce (optional)
- 1 tablespoon lime juice
- 3 - 4 lime leaves (optional, adds a fragrant citrus note)
- 2 tablespoons coriander
- 1 cup snow peas (optional)
Instructions
- Boil the noodles as per the packet instructions, then drain and set aside.
- In a bowl, mix sliced chicken with soy sauce, ginger, garlic, sambal oelek, and lime leaves (if using). Let it marinate for 15-30 minutes for extra flavour.
- Heat oil in a large pan or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
