    1. In a blender, mix the soy sauce, onions, garlic, chillies, galangal, ginger, turmeric, and water into a smooth paste.
    2. Cut the meat into small bite-sized pieces and mix with half the paste. Let stand for 30 minutes to marinate.
    3. While waiting for the meat to marinate, mix the rest of the paste with the coconut milk and lemongrass in a large pot.
    4. Bring the pot to a boil for around 30 minutes or until the mixture has reduced by half.
    5. Add the marinated meat and paste mix to the pot and continue to boil for another 20 minutes. Reduce to a simmer and cook for an additional 30 minutes, or until the meat is tender.
    6. Serve with rice and garnish with chopped shallots.
