    Ingredients

    • 6 chicken thighs (cut into thirds)
    • 2 teaspoons cornstarch
    • 1/2 cup plain flour
    • 1 1/2 teaspoons Chinese chili sauce with garlic
    • 1/2 teaspoon soy sauce
    • 1/2 teaspoon salt
    • 3 cups oil
    • 1 1/2 teaspoons ginger (grated)
    • 1/3 cup water
    • 3 teaspoons honey
    • 8 spring onions

    Instructions

    1. Combine flour and salt. Coat chicken pieces with the flour mixture
    2. Heat oil in a wok over high heat
    3. Cook only 1/3 of the pieces at a time. Cook until golden, about 5 minutes.
    4. Drain on absorbent paper towel. Repeat with the remaining chicken
    5. Pour out all but 1 tablespoon of oil from the wok. Combine water, lemon juice, cornstarch, chili sauce, and soy sauce in a small bowl
    6. Add ginger to the oil in the wok. Stir fry for 1 minute. Add honey to the ginger. Cook for 1 minute. Add the chili mixture to the wok. Cook until the mixture boils, about 1 minute
    7. Stir the chicken pieces into the chili mixture. Cook and stir until the chicken is hot throughout, about 3 minutes. Stir in the onions. Cook and stir for 1 minute
