Ingredients
- 6 chicken thighs (cut into thirds)
- 2 teaspoons cornstarch
- 1/2 cup plain flour
- 1 1/2 teaspoons Chinese chili sauce with garlic
- 1/2 teaspoon soy sauce
- 1/2 teaspoon salt
- 3 cups oil
- 1 1/2 teaspoons ginger (grated)
- 1/3 cup water
- 3 teaspoons honey
- 8 spring onions
Instructions
- Combine flour and salt. Coat chicken pieces with the flour mixture
- Heat oil in a wok over high heat
- Cook only 1/3 of the pieces at a time. Cook until golden, about 5 minutes.
- Drain on absorbent paper towel. Repeat with the remaining chicken
- Pour out all but 1 tablespoon of oil from the wok. Combine water, lemon juice, cornstarch, chili sauce, and soy sauce in a small bowl
- Add ginger to the oil in the wok. Stir fry for 1 minute. Add honey to the ginger. Cook for 1 minute. Add the chili mixture to the wok. Cook until the mixture boils, about 1 minute
- Stir the chicken pieces into the chili mixture. Cook and stir until the chicken is hot throughout, about 3 minutes. Stir in the onions. Cook and stir for 1 minute
