    Ingredients

    • 15 ml dry sherry or cooking wine
    • 15 ml tomato sauce
    • 15 ml soy sauce
    • 15 ml vegetable oil
    • 1 teaspoon caster sugar
    • 1/2 clove garlic (minced)
    • 1 tablespoon ginger root (chopped)
    • 1/2 teaspoon green chilies (finely chopped, optional)
    • 1 spring onion (optional)

    Instructions

    1. Ensure that the ginger is fresh and peeled before finely chopping it. Similarly, finely chop the onion. The amount of onion can be adjusted to your taste; some people prefer no onion at all and opt for just the spring onion garnish to add a mild onion flavor to the dish.
    2. Finely chop the chilies and mix them with the sweet vinegar. Then, combine all the ingredients, except for the spring onion, in a bowl. Mix well. Chop the spring onion and sprinkle it over the dipping sauce before serving
