Ingredients
- 4 cups cold cooked rice
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoons pepper
- 4 tablespoons canola or peanut oil
- 1/2 cup spring onion (thinly sliced)
- 1/2 cup onion (diced)
- 1/2 teaspoon soy sauce
- 1/2 teaspoon oyster sauce
- 1/2 cup chicken or ham (diced)
- 1 cup bean sprouts
- 1 clove garlic
- 1 cup peas
Instructions
- Break up the cold rice until it is loose.
- Beat the eggs in a bowl and add salt and pepper.
- Heat some oil in a hot wok, add the egg mixture and half the spring onions, scramble and cook until dry, then remove from the wok.
- Add a little more oil to the wok and cook the onions and garlic for about 30 seconds.
- Add the remaining spring onions and the meat in small batches. Remove and set aside.
- Add the other vegetables, except for the bean sprouts, in small batches, cooking until they are cooked but still firm.
- Once all the ingredients are cooked, cook a cup of rice at a time in the wok with some of the cooked ingredients and bean sprouts.
- Once everything is hot, return all ingredients to the wok, add the soy sauce, and stir well before serving.
