- 300 gram minced beef
- 1 oniion (finely chopped)
- 1 carrot (finely diced)
- 1 tablespoon crushed garlic, ginger & shallots
- 1 tablespoon crushed onion, garlic & chilli
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce (or more soy sauce if you prefer)
- 1 teaspoon sugar
- 1 teaspoon chili flakes (or to taste)
- 1 teaspoon ground coriander
- 1 teaspoon turmeric powder
- 2 tablespoons lime juice
- 1 tablespoon crushed roasted peanuts
- 1 handful herbs (coriander, mint, and Thai basil)
- 1 tablespoon seasame oil
- 2 spring onions
Instructions
Cook the Beef:
- Heat sesame oil in a pan and add the minced beef and break it up with a spatula.
- Stir in ground coriander, turmeric powder, and chilli flakes.
- Cook until beef is browned and cooked through.
Season the Beef:
- Add soy sauce, fish sauce, and sugar. Stir well.
- Squeeze in the juice of 1 lime (or 2 tablespoons lime juice) for tanginess.
Add Crunch and Herbs:
- Stir in crushed roasted peanuts for nuttiness.
- Add finely chopped onion, carrot, spring onions, and a mix of fresh herbs. Toss everything together.
Finish and serve:
- Taste and adjust seasoning with more lime juice, fish sauce, or chilli flakes as needed.
- Serve the Laap Neua on a platter with lettuce or cabbage leaves for wrapping. Garnish with extra herbs, cucumber slices, and lime wedges. Add steamed sticky rice or jasmine rice on the side.
