Spicy seafood and beef rice

 

Beat eggs with a little salt and pepper to taste, then in a hot oil covered wok make an omelet with half of the mixture. Once cooked set aside and make another omelet with the remaining mixture.

When cold roll the omelet's into long tight rolls then slice thinly and set aside.
Shell and Devin the prawns, slice the onion into thin rings and prepare the steak.
In a food processor or by hand crush and mix the garlic, shrimp paste, soy and ginger.
In the hot wok add some oil and the sauce mixture then in small batches add the prawns, onion and the beef until cooked.

Once all meat is cooked remove from pan and add small quantities of rice, capsicum, bean shoots and onion with some of the meats.

You may need to add a little more oil.  Once all cooked toss in the omelets slices and serve hot with the cucumber as a garnish.
